WHY SHETLAND CATTLE?
Shetland Cattle are both one of our oldest and rarest Scottish breeds by ‘Going Native’ we can keep part of our agricultural heritage alive, enjoying traditional beef reared the old fashioned way! Prized by the crofting communities of the Shetlands for providing both rich milk and meat these bonny wee beasts are now being recognised further afield as a antidote to modern commercial farming being slow grown, adept at conservation grazing and doing well off grass alone so reducing carbon footprints, indeed sequesting more carbon than they emit, providing meat with integrity from field to fork.
Shetland beef has that traditional beef flavour that comes from our rare breed cattle being reared slowly on the lush green pastures of our family farm here in Dumfries and Galloway. Being matured for longer than commercial cattle our Shetland beef has a rich flavour with a good amount of marbling and fat cover to ensure a juicy steak and tender roasts every time! Our beef is hung for 3 weeks to ensure that the flavours develop along with that famous ‘melt in the mouth’ texture. Scottish beef at its most traditional and best!
